Agave
With over 250 varieties, agave is quite literally the roots of tequila and mezcal. From Blue Weber of Tequila fame to obscure varieties grown in small villages, each has something unique to impart on the final spirit.

Tequila is a drink, or is it a place? Where does Mezcal come from? The geographic variety of agave spirits is one of the most interesting pieces to be explored about this enigmatic libation.
Process
10-30 year growth cycle. Jimadors and coa knives. Pinas, fires, donkeys, and grinding stones. What do all these have in common? Well, all are critical in getting spirit from field to bottle.
